Sweet Potato, Black Bean and Quinoa Burgers





Ingredients (makes 8 patties)

2 large sweet potatoes

1 cup cooked quinoa

1 can black beans

1 tsp paprika

1 tsp cumin

1 tsp chilli flakes

1 tsp parsley

Salt & pepper to taste.

8 burger buns

1 avocados,

2 tomatoes, sliced

Cos lettuce


Method 1. Heat oven to 200 degrees celsius. Line oven tray with baking paper. Remove ends from sweet potato and cut into quarters. Place in oven tray and bake for 45-50 minutes. Once cooked, remove from oven and allow too cool.


2. Rinse black beans and add to a mixing bowl. Mash beans roughly so that partially formed beans remain. Remove outer skin from sweet potato and add into bowl. Add quinoa, paprika, cumin, chilli and parsley. Mix well together with hands.


3. Use 1/2 x cup measure to spoon mixture into hands and roll into an oval shape. Place on oven try and light press down to flatten patty. Repeat until all mixture has been used.


4. Place patties in oven and bake at 180 degrees celsius for 45 minutes, flipping once.


5. Add patty to burger bun, topping with lettuce, sliced tomato and avocado.


6. Serve and enjoy!
